Aflatoxin is a toxic and carcinogenic substance produced by certain strains of the molds Aspergillus flavus and A. parasiticus. There are four principle types of aflatoxin: B1, B2, G1 and G2. Aflatoxin B1 is the most frequently encountered of the group and the most toxic. The commodities most affected by aflatoxin are corn, peanuts, cottonseed, milo, and the majority of tree nuts.
The effects on animals that ingest excessive amounts of the toxin range from chronic health and performance problems to death. Aflatoxin has been shown to cause liver damage or cancer, decreased milk and egg production, immune suppression, and interference with reproductive efficiency.
Many countries have set maximum allowable levels of aflatoxin in food and feed. Therefore, accurate determination of the toxin’s presence is crucially important to those monitoring the quality of food and feed in which aflatoxin may occur. CleanTrace™ ALLTEC60 Surface Protein Swabs are a fast and easy way to visually check whether cleaning has been carried out to a satisfactory standard by means of protein detection. By comparing the color of the swab and solution against the label, the user can easily interpret the results for the presence of allergens. Clean-Trace® ALTEC60 Surface Protein (Allergen) Test Swab is validated for a range of allergenic proteins, including egg, milk, gluten, soy, peanut, almond and buckwheat. Refrigeration is not required -swabs can be stored at room temperature (25°C or 77°F). This easy-to-use device requires minimal training. The results are semi-quantitative with four possible color interpretations. The faster the test turns purple and the stronger the color change the higher the level of contamination on a surface.
Quick detection and confirmation allows immediate corrective action to take place. A visual reading of a color change indicates the level of cleanliness by detecting as little as 3µg of allergen on surfaces and in solution. No instrumentation is required to interpret the sample results.

Succinic acid (or succinate) is found in all plant and animal materials as a result of the central metabolic role played by this dicarboxylic acid in the Citric Acid Cycle. Succinic acid concentrations are monitored in the manufacture of numerous foodstuffs and beverages, including wine, soy sauce, soy bean flour, fruit juice and dairy products (e.g. cheese).

Sulfiting agents, sodium bisulfite and sodium metabisulfite, are used with shrimp, lobster and related crustaceans to prevent melanosis (a.k.a. “blackspot”). While sulfiting agents are very beneficial to the seafood industry, some consumers are highly allergic to sulfite residues in food. For this reason, FDA regulations state that seafood containing sulfite residues of 10 parts per million (ppm) or more must be labeled as containing sulfites. Monitoring and verification of sulfite residues are required as part of a Hazard Analysis and Critical Control Points (HACCP) program. Alert® for Sulfites is a very simple and rapid semi-quantitative test for detecting sulfite residues in shrimp.
